Cleanliness in Your Facility – The Key to Perfect Baked Goods
At the same time, it is essential to remember that insufficient hygiene standards in bakeries and confectioneries can promote the growth of bacteria, mould and other microorganisms, which may contaminate prepared products.
The build-up of residue, dirt and grease on baking trays, moulds and other equipment components can disrupt production on many levels. Cleaning becomes time-consuming, the use of chemical agents increases operating costs, and improper maintenance may lead to equipment damage, ultimately affecting product quality.
At the same time, it is essential to remember that insufficient hygiene standards in bakeries and confectioneries can promote the growth of bacteria, mould and other microorganisms, which may contaminate prepared products.
Would you like to deal with these issues effectively? Discover our three practical solutions.
Universal Baking Tray Cleaning Machine
Say goodbye to manual cleaning – our universal countertop tray cleaning machine takes the workload off your team. It is one of our most popular and user-friendly solutions. The machine effectively removes flour residue, seeds and small remnants of baked dough. Designed for continuous operation, it can clean up to 200 trays per hour, helping to significantly improve efficiency in your facility.
In addition, the machine requires minimal counter space, which is particularly important in a well-organised bakery or pastry production area. Thanks to its efficiency and effectiveness, the universal tray cleaning machine is a practical and valuable addition to any facility producing bread or confectionery products.
HAEM Cleaning Liquid
HAEM is an effective and efficient cleaning liquid designed for modern bakeries and confectioneries. It is valued for its performance, helping to streamline production processes while reducing operating costs.
The liquid is safe for tray surfaces and suitable for use on steel, stainless steel and aluminium. An additional advantage is that it can be reused multiple times – after several cleaning cycles, the accumulated residue simply needs to be filtered out. Importantly, HAEM is biodegradable, making it a responsible choice for manufacturers who care about the environment.
Seasoning Trays and Moulds Before First Use
Seasoning trays before first use ensures they are properly prepared for operation. In the case of baking trays with a non-stick coating, this involves heating them in the oven for approximately 45–60 minutes at a temperature of 80–100°C. After heating, the working surface should be lightly coated with vegetable oil and left to cool naturally at room temperature. If the trays are silicone-coated, they require a dedicated heat treatment process – 60 minutes at 250°C or 4 hours at 200°C. Trays coated with Polirex Green or Polirex Black do not require seasoning before first use.
