Even the most perfect forms will retain their properties only if their users show proper care both in terms of operation and cleaning. Some of the rules apply to all plates, but some require special treatment. We present an overview of good practices that will allow you to use bakery and confectionery equipment for many years.

Heating trays before baking

The first step in caring for baking moulds is heating them before their first use. The process consists of three steps: metal sheets should be heated in the oven, then covered with a layer of vegetable oil and left to cool at room temperature. For Non-Stick coating, the heating takes place at the temperature of 80-100°C for 45-60 minutes. Silicone-coated products must be heated at 250°C for 60 minutes or at 200°C for 4 hours. The exception is baking moulds with PoliRex Green and PoliRex Black coatings, which do not require pre-baking.

Careful use guarantees the long-term life of trays and moulds

Trays and moulds made of AluSteel do not deform either under the influence of high temperatures or in the process of heating and cooling during baking. However, remember about good practices during use, which will allow you to maintain their properties.

  1. Place baking trays and moulds as gently as possible to avoid the risk of deformation and damage. Beware of dropping them or throwing them on top of each other.
  2. Regularly clean the sheets of carbon deposits, because even the smallest layer of dirt affects the functionality of the equipment. Carbon deposits on the bottom clog the holes, extending the production time, lowering the quality of products and inhibiting the circulation of warm air.

Additional precautions for Non-Stick baking trays:

  1. Never bake trays and moulds without a load – this way you will extend the life of the coating.
  2. Avoid cutting baking goods on a tray or mould and do not use sharp tools such as knives, scrapers or other elements of equipment, do not pry it with sharp spatulas. This way, you won’t damage the surface.
  3. Always dry non-stick products completely, otherwise the dough will stick to it and damage the surface.
  4. Keep the air humidity as constant as possible in the proofers.

Cleaning baking trays

The basis for the proper and safe operation of every bakery or confectionery is hygiene. The key here is not only the frequency of washing accessories but also the right selection of cleaning equipment and the method of removing dirt. This is important because properly selected brushes will be able to remove stubborn dirt or deposits, and at the same time remain gentle enough not to damage the delicate coating of baking sheets or baking forms, even those coated with Teflon. In addition, the machine should be easy to use, occupy as little space as possible on the countertop and be able to clean baking trays and baking moulds of various shapes.
